Ok... they taste ok... The first tester one fell to peices in the water!!! and I had to scoop it all out... I then added some bread crumbs like the recipe said and the rest turned out ok.... but still not as soft and spongy as the recipe says or my friends ones turned out.... I used your link here and added the parsley which I like... I am wondering if the error I made was using margarine instead of butter...??
Anyway I served them with a beef casserole I made today and the kids were very impressed with the unusual variation to the diet.... they said to say thank you to the person who taught me about dumplings and I assured them I would pass on thier gratitude to you...
I am yet to eat mine as I often eat later in the evening so I have just had a quick taster and yepppp there is definitely room for improvement....

Not sure about the butter vs. margarine. I don't remember which I used, but probably butter.
It's hard to say why the one fell apart in the water. Could have been too wet OR too dry. I know you have to get a "feel" for them, like you do making bread.
Also, the bread I used was day (or two) old french bread. If you used fresh french bread, I understand the results are different. And finally, yes, I agree that the dumpling, when done, was spongy. It's hard to call them "soft" though. They are really fairly firm and heavy. You can cut them up like meat, into small bites, as you eat them with soup or whatever.
